Three Irish restaurants added to the 2022 MICHELIN Guide

A great day for the parish.

Ahead of the full Michelin Guide launch for 2022, a sneak peek at Britain and Ireland’s 16 new Bib Gourmand restaurants has been offered. The 2022 Michelin Bib Gourmands demonstrate an impressive sweep for restaurants across the country, with bibs awarded to three Irish eateries. The newest additions to the guide hail from Galway, West Cork and Waterford so if you’re a foodie wondering where to hit up for your next staycation, read on.

Here are the three Irish restaurants to most recently be added to the Michelin Guide.

Cush, Ballycotton

Located in an idyllic corner of West Cork you’ll find Cush, a family run restaurant and guest house by the sea.

Here’s what the Michelin Guide had to say about the maritime spot:

Cush is family owned and run, and guests are well looked after by the friendly, welcoming team. The smart, modern restaurant sits in a pretty coastal town; there’s also a traditional pub and stylish, comfy bedrooms, with views out over the rooftops to the fishing boats in the harbour. Regional produce features in hearty, seasonal, modern dishes, with locally caught seafood naturally to the fore: choices might include grilled fillet of haddock with leeks, haddock fishcake & Ballycotton Queens in seaweed butter.

Ean, Galway

The artisan bakery and wine bar is a sister restaurant of Loam (also a Michelin Guide alum), and earned its place on the guide for its “creative, confident dishes.”

Éan is owned by Enda McEvoy of One MICHELIN Starred Loam – which also earned itself a MICHELIN Green Star in 2021 – so it’s no surprise to see a similar approach to seasonality, sourcing and sustainability at this artisan bakery-cum-café, which morphs into a wine bar in the evenings. Pastries, sandwiches, salads and soups are on the menu at lunch, while dinner sees creative, confidently executed dishes like squid toast with white miso & bonito, or lamb shoulder with cider carrots, designed for sharing. A natural, biodynamic and organic wine list completes the picture.

Everett’s, Waterford

In the heart of Ireland’s oldest city you’ll find Everett’s, a venue steeped in history featuring an intimate wine vault perfect for occasions or romantic meals for two.

The Michelin Guide said of the Waterford spot:

This unpretentious, welcoming bistro in the heart of the city is run with great pride – and so it should be, given the care that they take with the cooking and the generosity with which it is served. Sit in the characterful downstairs room under a vaulted brick ceiling to enjoy confidently crafted, flavorsome dishes like Castletownbere crab & gazpacho or braised shoulder of Comeragh mountain lamb with coco beans, carrot & smoked almond, which showcase the best of the Irish larder.
