Lentil Chocolate Chip Cookies

Preparation time: 20 minutes
Time to cook: 30 minutes
It serves: 7 dozen cookies
1 ½ cups of butter
2 ½ cups packed brown sugar
1 cup of white sugar
4 teaspoons vanilla
5 eggs
4 cups all-purpose flour
1 teaspoon of baking soda
1 teaspoon salt
¾ cup timeless French-style lentils, well cooked in 2 cups water, drained and pureed
3 cups old-fashioned rolled oats
2 cups semisweet chocolate chips
2 cups of chopped walnuts
- Preheat oven to 375 F.
- In a large bowl, combine the butter, brown sugar, and white sugar. Add the vanilla and eggs; Beat until smooth. Add pureed lentils to the butter mixture.
- In a separate bowl, sift together the flour, salt, and baking soda. Add to creamy mixture and mix lightly.
- Gently mix the oatmeal, chocolate chips, and walnuts until evenly combined. Chill the dough until ready to handle. Place the dough in rounded tablespoons on an ungreased baking sheet. Bake 5 minutes; turn the pan over and bake another 5 minutes, or until the cookies are lightly golden brown.
