Lentil Chocolate Chip Cookies

Time to cook: 30 minutes
It serves: 7 dozen cookies

1 ½ cups of butter
2 ½ cups packed brown sugar
1 cup of white sugar
4 teaspoons vanilla
5 eggs
4 cups all-purpose flour
1 teaspoon of baking soda
1 teaspoon salt
¾ cup timeless French-style lentils, well cooked in 2 cups water, drained and pureed
3 cups old-fashioned rolled oats
2 cups semisweet chocolate chips
2 cups of chopped walnuts

  1. Preheat oven to 375 F.
  2. In a large bowl, combine the butter, brown sugar, and white sugar. Add the vanilla and eggs; Beat until smooth. Add pureed lentils to the butter mixture.
  3. In a separate bowl, sift together the flour, salt, and baking soda. Add to creamy mixture and mix lightly.
  4. Gently mix the oatmeal, chocolate chips, and walnuts until evenly combined. Chill the dough until ready to handle. Place the dough in rounded tablespoons on an ungreased baking sheet. Bake 5 minutes; turn the pan over and bake another 5 minutes, or until the cookies are lightly golden brown.
